S'mores Bars

I Made this a few hours ago, my family loves it and it's almost gone because it's so good!

Ingredients:

14-16 whole graham crackers (per layer)

3/4 cup (175 ml) Unsalted butter

2/3 cup (150 ml) Light brown sugar, packed

1/2 cup (125 ml) Milk (2% or almond)

1/2 tsp (2 ml) Vanilla extract

1 1/4 cups (300 ml) Graham cracker crumbs

2 1/2 cups (625 ml) Semi-sweet or milk chocolate chunks 

(chocolate chips work too)

3 cups (750 ml) Mini marshmallows 

Instructions:

  1. Preheat the oven to 350°F (180°C)
  2. Grease a 9-inch pan (2.5)L square pan. 
  3. Line the bottom of pan with a single layer of whole graham crackers. (About 4 1/2
  4. In a sauce pan, melt butter, then stir in brown sugar, milk and vanilla until dissolved.
  5. Remove from heat and stir in graham cracker crumbs (this makes a soft paste) 
  6. Spread half the paste on the crackers in the pan.
  7. Sprinkle a third of the chocolate chunks and half the marshmallows.
  8. Top marshmallows with another layer of graham crackers and spread the rest of the paste over top.
  9. Put on the rest of the chocolate and marshmallows and bake for 12 minutes or until marshmallows are browned. 
  10. Cool completely before serving. 
S'mores bars can be stored in an airtight container for 3 days.

The paste softens the crackers just enough so they are easy to slice.
