Berry Bannock Bread Pudding
INGREDIENTS:
5 cups of day old bannock, rip into small chunks
1/2 of milk
1 egg
1/4 granulated sugar and 2 tsp for top
2 tsp of vanilla extract
1 pinch of ground nutmeg
1 cup of fresh or frozen berries
2 tbsp of coconut
DIRECTIONS:
- Turn on oven to 350°F
- Lightly grease 8 inch oven safe dish; scatter half of the bannock in the dish
- In bowl,whisk together milk, egg, 1/4 sugar, vanilla and nutmeg. Pour about half the mixture over the bread, pressing back of spoon so that the liquid will soak into the bannock. Spoon half the berries over top.
- Repeat with remaining bannock, egg mixture and berries.
- Sprinkle with remaining 2 tsp of sugar.
- Bake in over until light golden about 25 minutes. Sprinkle with coconut.
- Bake until coconut starts to turn golden, 10-15 minutes.
When I made this I used cashew milk, brown sugar and I didn't have the coconut, it still tastes delicious with the changes I had to make to it.
