Berry Bannock Bread Pudding

 

INGREDIENTS:

5 cups of day old bannock, rip into small chunks

1/2 of milk

1 egg

1/4 granulated sugar and 2 tsp for top

2 tsp of vanilla extract 

1 pinch of ground nutmeg 

1 cup of fresh or frozen berries

2 tbsp of coconut 

DIRECTIONS:

  1. Turn on oven to 350°F
  2. Lightly grease 8 inch oven safe dish; scatter half of the bannock in the dish 
  3. In bowl,whisk together milk, egg, 1/4 sugar, vanilla and nutmeg. Pour about half the mixture over the bread, pressing back of spoon so that the liquid will soak into the bannock. Spoon half the berries over top.
  4. Repeat with remaining bannock, egg mixture and berries. 
  5. Sprinkle with remaining 2 tsp of sugar.
  6. Bake in over until light golden about 25 minutes. Sprinkle with coconut.
  7. Bake until coconut starts to turn golden, 10-15 minutes.

When I made this I used cashew milk, brown sugar and I didn't have the coconut, it still tastes delicious with the changes I had to make to it.
